About this treat

Kutch and Saurashtra's winter sweet

Adadiya — or Adadiya Pak — is a winter speciality of Kutch and Kathiawad. Its base is urad dal (black gram) flour, which is first rubbed with a little hot ghee and milk (a step called dhrabo) so it roasts evenly into a fragrant, grainy texture. It is traditionally eaten on winter mornings for warmth and energy, and many families make a large batch once the nights turn cold.

How DeshÉ makes Adadiya

  • Coarse urad flour given the traditional dhrabo, then roasted in pure ghee for close to an hour on a low flame.
  • Gond (edible gum) puffed in ghee for little bursts of crunch.
  • Khoya (mawa) for a soft, milky richness.
  • Winter spices — dry ginger, ganthoda, nutmeg, mace and cardamom.
  • Almonds and pistachios on top.

Our Traditional Adadiya is sweetened with sugar the way most Kathiawadi homes make it. The Jaggery (Gur) Adadiya swaps sugar for jaggery, giving a darker colour and a caramel-like depth.

How to enjoy it

Eat a small square in the morning, ideally with warm milk or masala chai. Adadiya is very rich, so a piece a day is the custom. It makes a heartfelt gift for elders and is often packed for relatives living away from Gujarat who miss the taste of home in winter.

Shelf life

Storage
